A Delicious Salad Dressing That is Great for You

Ive had nothing but accolades from patients and readers who have tried my homemade salad dressing (see the January 2005 issue). I have some good news for you. Ive been able to improve it.

Ive been telling you for some time that excess fat and oil in your diet is just not good for you. Most commercial salad dressings are loaded with toxic heated oils. My original salad dressing called for equal parts of organic extra virgin olive oil and fresh squeezed lemon/lime juice. Since my wife and I are trying to cut our oil use down, we decided to reduce the amount of olive oil. Yes, high quality olive oil in limited quantities has wonderful health benefits.

However, olive oil is fat, and while a healthy food, I do not consider extracted oil a living food. My goal is to reduce the fat and non-living components in my diet.

Heres what I used instead:

Juice about one cup of lemon and/or lime juice in a citrus juicer. Put it in your Vita-mix or other blender and add the following: one medium-sized onion, one medium-sized beet, and two medium-sized carrots. You will have to cut these for the blender to function well.

Then add four to five cloves of garlic and about 1 tablespoon (more or less to taste) of Himalayan Salt. Its a very healthy salt.

Finally, add two teaspoons of organic Dijon mustard, about one to two inches of peeled garlic root, and one ripe avocado. For additional taste, I add two tablespoons of organic toasted sesame oil (yes this is an oil, but in far less amount than what I was using with olive oil).

For texture, I also will occasionally add one tablespoon of grapeseed Veganaise®, a much healthier alternative to mayonnaise, or up to two tablespoons of organic extra virgin olive oil. Now blend.

This cuts liquid oil by over 80%. While the avocado does add some fat, it is an unrefined living food.

This dressing has taken over my house by storm. Terri uses it as a dip for raw cauliflower and broccoli. My daughters, when they visit from school, are wild about it. A dressing with minimal oil! Little damage to your weight. I eat a few pounds of salad with this dressing almost every day. Ive never had to battle excess weight.

My family wants me to market it. However, that would be hard. Its a living food, literally a blended salad used as a dressing. Bottling it would subject it to high heat, which would alter and kill its life force.

So, you will have to make it yourself, fresh, in your own kitchen. I can almost promise you that you will be as wild over it as my family. And, best of all, with such a minimum amount of oil and loaded with extremely healthy nutrients, you can pour it on!
